How to make good churros

The recipe for the well-known churros (Spanish doughnuts) is very simple, and it is a very popular food in Spain, particularly in Andalusia.

The churros recipe basically consists in a flour dough fried in very hot oil; there is a large number of different kinds of churros. In fact, there are cafés and restaurants that are specialized in this recipe, called churrerías.

Ingredients are: 1 cup water, 1 cup flour, half teaspoon salt, 1 spoonful butter, olive oil and 200 gr. Sugar.

First, boil water, combined with your butter and salt in a saucepan. Once the water reaches a boil, stir in the flour and start stirring with a spoon, without stopping.

Then let the dough sit until it is luke-warm. In this moment you will need a churro machine. You can buy one of these at any shop selling kitchenware. This machine is used to put the dough into it and then pour the fritters into the frying pan to fry them.

Once the oil is very hot, place the churros, frying them good on each side. Finally, remove the churros from the oil and place them onto a paper-toweled plate to soak up most of the oil.
